From the kitchen: Dry marinate

Winterzeit ist auch Wildzeit und da meine Gäste an Sylvester auf meine Beiztechnik sehr erstaunt reagierten (das Ergebnis aber sehr zu schätzen wußten) scheint es nicht allgemein bekannt zu sein. Also diesmal eine kleine Anleitung aus der Küche.

Winter is also the time for eating game dishes. My guests at New years eve were all surprised by my technique of marinating it (but delighted by the result), so it seems not to be generally known (as I had thought). So this time a tiny tutorial from the kitchen.

GewürzeLos geht es mit Gewürzen und einem Mörser. Ich verwende Wacholderbeeren, roten und schwarzen Pfeffer, Piment, Kardamom, Coriander, ein Stück Lorbeerblatt, ein Stück Zimtstange und eine Nelke.

Das alles kommt in den Mörser und wird dort zerkleinert.

I’m starting with spices and a mortar. I’m using juniper berries, red and black pepper, allspice, Cardamom, Coriander, s bit of a bay leaf, cinnamon and a clove.

That’s all getting pulverised in the mortar. (Well, not to fine, just all grains broken.)

Geschirrtuch tränkenDanach gilt es ein Geschirrtuch zu opfern.

Opfern deswegen, weil es mit gutem Rotweinessig befeuchtet wird. Und Rotweinessig wäscht sich ungefähr genauso gut wieder raus wie Rotwein. Also nehmt eines das heiße Wäsche verträgt und nicht euer schönstes.

Das Tuch wird so getränkt, daß es gut durchfeuchtet ist, aber nocht nicht wirklich suppt. Und zwar auf einer Fläche die groß genug ist, euer Fleischstück komplett zu umschließen.

Auf den Essig kommen dann die zerstoßenen Gewürze.

Then you have to sacrifice a tea towel.

Sacrifice because you sparkle it generously with good red wine vinegar and since that is made from red wine it stains like red wine. So take one that can be washed hot and don’t take your best one.

You soak enough of the towel to cover your piece of meat completely. You want it well wet, but not really dripping. And on top you distribute your pound spices.

Fleisch einrollenDann wird das Fleisch in das Tuch eingerollt.

Put your piece of game on top of the spices and roll it into the towel.

Die Methode, Fleisch zum beizen in Essig oder ein Essig-Wein Gemisch einzulegen kennen sicher alle. Die Methode hat allerdings den Nachteil, daß sie das Fleisch auch stark auslaugt. Und bei kleineren Stücken oder auch bei feinen Teilen wie Filets möchte man das manchmal nicht.

Bei der Trockenbeize bekommt das Fleisch etwas weniger von dem säuerlichen Essiggeschmack, dafür ist der Geschmack der Gewürze intensiver. Und wie oben schon angedeutet, besonders geeignet für kleiner Bratenstücke oder auch feine Stücke die man in der Pfanne braten möchte.

Hirsch eingerolltUnd so eingerollt wandert das Fleischstück dann in den Kühlschrank. Mindestens 24 Stunden, drei Tage sind aber besser. Und fünf sind auch möglich.

Danach wird es ausgewickelt, abgewaschen, gut abgetrocknet und nach Wunsch gebraten.

The technique to marinate the game in vinegar, wine or a mixture of both is widely known, I think. Only disadvantage is that especially smaller pieces of meat can become a bit dry or fine pieces as filets or faux filet might loose to much of their taste.

With this technique of “dry marinating” the sour taste of the vinegar is less dominant and the taste of the spices is stronger. And as already mentionned, it’s suits especially smaller pieces and those (as filets) you want to fry in a pan.

The wrapped meat goes in the fridge, 24 hours is minimum, three days is better and even five are normally not a problem.

Then you unwrap it, wash of the spices, dry with kitchen towels and prepare as you like it.
